ANALYSIS OF THE STATE OF THE FROZEN FLOUR AND BAKERY PRODUCTS MARKET IN UKRAINE
Abstract
The article provides a comprehensive study of the current state and development prospects of the frozen flour and bakery products market in Ukraine and the world. The strategic importance of the bakery industry is substantiated as the basis of food security and the foundation of the consumer food pyramid. The author establishes that under the conditions of globalization, the traditional "local" nature of the bread market is being transformed by shock freezing technologies, which allow for the elimination of logistical barriers, standardization of product quality, and optimization of costs through the "Bake-off" concept. The paper analyzes in detail the structure of the global market, where Europe is the leader with a share of over 50%, and identifies key product categories: Frozen Dough, Part-Baked, Ready-to-Bake, and Fully Baked products. It is determined that the main market drivers are the growing demand for high-quality ingredients, organic products, and convenience of preparation. Special attention is paid to the analysis of the Ukrainian market during the 2020–2025 period. Based on the financial indicators of key operators (Frozenfood UA LLC, Yugfood LLC, BFI LLC, Levada LLC, Mantinga-Ukraine LLC, and others), a steady trend toward revenue growth and increased market concentration around large players was identified. The impact of the full-scale war on the industry is studied, specifically using the example of the destruction and restoration of the "Chanta Mount" plant's capacities. It is proved that the financial stability of enterprises is significantly influenced by macroeconomic factors, particularly the devaluation of the hryvnia, as a significant portion of raw materials and equipment has an import component. The dynamics of imports from leading European manufacturers (La Lorraine, Vandemoortele, Stokson) are analyzed, demonstrating growth in both physical and monetary terms, which indicates increased competition and a shift in consumer preferences toward a more expensive, high-quality assortment. The study concludes that the industry possesses high adaptability and significant potential for further innovative development in the medium term.
