ANALYSIS OF THE VECTORS OF HOSPITALITY DEVELOPMENT TODAY: FROM CHALLENGES TO OPPORTUNITIES
Abstract
The relevance of the topic is due to the analysis of the modern hospitality market. It is worth noting that tourists spend about a third of their vacation budget on food, which emphasizes the importance of food activities in the hospitality industry. Since local entrepreneurs often offer traditional food, obtained from fresh local ingredients and served in an atmosphere characteristic of the respective territory, food consumption is a real tourist attraction designed to complete the tourist experience of the trip. Thus, through food services, tourists join the culinary traditions of the destination they visit, strengthening national identity. At this level, such advantages as fewer human errors, less waste, maximum benefit from the product, fast service, a safe and transparent food chain, customer satisfaction and individual orders are ensured. Therefore, safety, innovation and customer orientation are the main adaptive steps of the restaurant business in the coming years. Adapting new technologies to the customer service process and taking measures to predict the further development of the restaurant business are indicators of the success of modern business. Therefore, there is an urgent need to analyze the vectors of development of today's hospitality: from challenges to opportunities. As a result of the analysis of the vectors of development of the modern hospitality industry, a number of challenges and opportunities were identified for young professionals in this field. For a successful career in the hospitality industry, it is necessary to develop communication skills, responsibility, professional knowledge and be flexible and adaptable. The requirements for education in the hotel and restaurant business include the integration of practical skills, adapted curricula and cooperation with business. Hospitality professionals must possess a wide range of competencies, including continuous improvement of culinary skills, leadership qualities and financial literacy. The modern hospitality industry is actively implementing innovations such as personalization of food, the use of local ingredients and sustainable development, as well as experimental gastronomy and the "solo dining" culture. Thus, the hospitality industry offers wide opportunities for professional growth and creative development.
