ORGANIZATION OF FOOD COURT RESTAURANT SERVICES IN SHOPPING AND ENTERTAINMENT COMPLEXES

Abstract

The article examines the organization of restaurant services in the Food Court format in shopping and entertainment complexes, which makes it possible to conclude that for the sake of successful competitiveness and effective functioning of restaurant establishments in Ukraine on the market of restaurant services, it is necessary to introduce the latest innovative developments and promising formats of the organization of production processes and customer service. Therefore, modern approaches to the organization of restaurant services in the Food Court format in shopping and entertainment complexes are an actual topic of research. The purpose of this study is to conduct a comprehensive analysis of the organization of restaurant services in the Food Court format in shopping and entertainment complexes. Research methods: systematic approach for comprehensive analysis of new modern formats of restaurant establishments; generalization, comparison, grouping of information regarding new modern formats; graphical method for presenting the results of analysis of the Food Court format. Three consolidated segments of the restaurant services market are distinguished – premium segment, medium segment and economy segment. It has been asserted that the functioning of restaurant business facilities in the conditions of successful competition is impossible without the introduction of advanced technologies, which, first of all, consist in choosing a popular and effective format of a restaurant establishment. It was determined that one of these formats is the modern new format of the Food Court restaurant establishment offered to consumers, which is progressing in the market of restaurant services and generating an active increase in competition. The Food Court was considered as an integral part of the trade and entertainment center for the organization of food services. The model of participation in the Food Court organization of a shopping and entertainment center is summarized with a detailed consideration of each of its components: location; a feature of the institution's designation; the idea of Food Court; design of space; feature of service services; spatial planning. It was determined that the spatial planning is a characteristic component of the model of participation in the organization of the Food Court of the shopping and entertainment center and has linear, circular, island (or local) placement, which is based on the principles of the organization of the Food Court. It is proven that the provision of food services in the Food Court format is stylish, well-thought-out spaces; offers of trendy dishes of various cuisines; fast service. Prospective directions of further research are outlined, which can be aimed at: new concepts of the functioning of restaurant business facilities in modern business conditions based on the introduction of a popular and effective format of a restaurant business establishment; analysis of foreign experience in providing services in the Food Court format.
