PROSPECTS OF IMPLEMENTATION OF INTELLIGENT AUTOMATION IN THE RESTAURANT BUSINESS IN THE CONDITIONS OF POST-WAR RECONSTRUCTION OF UKRAINE

Abstract

The article examines the restaurant technology market, which is rapidly developing and transforming the restaurant business as an important sector of tourism and hospitality. Thanks to intelligent automation, mobile applications, kiosks and chat-bots revolutionize the work of guests, and modern software automates the work of the restaurant. Despite the growing interest, the use of these innovative technologies in restaurants is still at an early stage, and restaurant managers are looking for guidance on how to use these technologies to improve service quality. In this high-touch service sector, emotional skills need to be balanced with the possible potential for automation. This study analyzes the current state of intelligent automation in the restaurant sector and proposes a systematic determination of the potential of innovative processes. For this purpose, a market analysis of the European market of intelligent automation for restaurant operations is conducted, which provides the first knowledge base for future research and conceptual work. In addition to detailed empirical data, a reference process has been developed for the use of new technologies for innovative processes in the restaurant business market of Ukraine, taking into account the conditions of war and post-war reconstruction of Ukraine. The reconstruction of Ukraine should be used to invest in sustainable restaurants, and support for IT startups will create opportunities for economic development. Based on the results of the research, it was determined that the restaurant business in Ukraine today is quite attractive, and innovation is a necessary element in the formation of restaurant business models. The challenges of a full-scale war did not stand in the way of the Ukrainian restaurant business and its desire for development. Already now, a significant part of enterprises is ready for transformation, entry into new markets, and, therefore, studying information, mastering new rules, and setting up processes. Reviving the economy and creating new business opportunities will require addressing both old and new challenges. Reconstruction should be used to invest in sustainable restaurants. Although intelligent automation is still not a big part of the restaurant industry, it is starting to take off.
